An exceptional vinegar
Apple cider vinegar has been used traditionally for a long time, in particular to improve digestion but also to facilitate weight loss. It was also registered in the Codex Medicamentarius (first French pharmacopoeia) from the 18th century.
It is obtained by fermentation from freshly squeezed apples, to which a "mother of vinegar" is added, a colony of bacteria which transforms the sugar in the apple into acetic acid, the main constituent of vinegar.
